Residents of SBI AltSU have developed vegetable marmalade and lupine flour

At the opening of the All-Russian Science Festival NAUKA 0+, which will take place on September 17 as part of the Education Days in Altai in the “Siberia” Concert Hall, Altai State University will present three exhibition sites with natural science and technological developments.

One of them, called "Smart" food is a biohacking tool," will be dedicated to personalized nutrition with a demonstration of products that are in line with the development trend of the food industry. Here AltSU will present innovative developments of the Student Business Incubator's residents: marmalade, made of natural ingredients, for example, such as pectin, dry honey, lupine products, and meitake mushrooms (Grifola frondosa).

“Student business incubator of innovative projects of Altai State University at the festival will show four types of marmalade, three of which are made of vegetables. Children are known, for the most part, for disliking vegetable crops, which have a lot of useful qualities necessary for a human body’s development. Therefore, we were faced with the task of making a tasty and healthy product for children, compensating, in particular, for the lack of fiber in the body,'' said Olga Vysotskaya, Director of the Center for the Development of Technological Entrepreneurship, Technology Transfer and Intellectual Property Management at AltSU. “At the Festival of Science, Altai State University residents will also present products of the first stage of deep processing from lupine - flour and oil obtained by the method of supercritical fluid extraction. For example, flour retains all the functional properties of lupine: a high protein content, an optimal combination of amino acids, and the absence of phytic acid. In addition, within the framework of the site, we plan to hold a quiz on healthy eating, wholesome food, the winner of which will have the opportunity to try one of the useful developments of our scientists - individually wrapped dry honey."

Olga Vysotskaya also spoke about the new large scientific direction of the SBI AltSU - the production of meitake mushrooms (Grifola frondosa), a product widespread in Japanese cuisine. Meitake mushrooms are known for their ability to reduce weight, produce an immunostimulating effect due to the presence of group B polysaccharides present in them. Terfas are intended for processing into various semi-finished products and ready-made meals at food industry enterprises, public catering, at home and for sale through wholesale and retail trade networks. In addition, medicinal types of mushrooms can be widely used in the pharmaceutical industry.

“Now we are working out the technology of growing meitake mushrooms, which, by the way, are unpretentious in their care. They can even grow at home on a windowsill and quickly enough. A series of experiments has already been carried out to create certain products from these mushrooms,” emphasized O. Vysotskaya.
