Altai State University scientists received a grant for the development of import-substituting product for the purposes of cheese manufacturing.

The project of the scientists of ASU Department of Organic Chemistry was supported by Russian Foundation for Basic Research. Evgeniya Kolosova, who works there as an engineer, has won the competition “My First Grant” presenting the project “Acquisition of Recombinant Chymosin of Cows, Camels and Lamas and Comparative Analysis of Their Milk-Clotting Activity”.

“Altai State University scientists are working on the creation of artificial agent chymosin. It is used for rennet cheese manufacturing. There is no such agent existing in Russia yet, it is imported from Europe. The creation of analogue of the expensive imported enzyme rennet will allow substantially reduce the dependence of Russian cheese industry on foreign producers,” reports the Department of Food Processing and Pharmaceutical Industries.

The research is carried out together with Siberian Scientific and Research Institute for Cheese Manufacturing (Barnaul).

Russian cheese-manufacturing enterprises’ demand for chymosin accounts for around 26 tons a year. Altai scientists count on implementation of import-substituting product into manufacture process in future.
